MEXICAN CHRISTMAS EVE SALAD - ENSALADA DE NOCHEBUENA - BEET SALAD

3 medium to large beets
1 medium jicama
3-4 medium oranges
1/2 to 1 cup unsalted peanuts
1/4 to 1/2 cup orange juice

Trim tops and bottoms off beets then wash beets.  Boil until tender.  Cool slightly, slip skins off and dice beets.  Place diced beets into a glass bowl (plastic may stain). While beets cook, peel and dice jicama.  Section oranges and remove membrane. Add jicama, oranges, and peanuts to beets. Stir to combine. Add orange juice.  Measurements included here are rough estimates feel free to adjust to your liking.
