4 large egg whites (or 1/2 cup liquid egg whites)
3 1/2 cups powdered sugar
1 tsp extract (vanilla, almond, peppermint)
Water as needed
Food coloring as desired.
Whip egg whites on medium high 2 minutes. Add 1/2 of the sugar, beat on low 1-2 minutes. Stop mixer then add remaining sugar and extract. Start on low then turn to high, whip 4-5 minutes until mixture holds peaks and is smooth and glossy. Use small amount of water to thin for piping if necessary. Divide and color as desired. Keep bowl covered as icing will dry hard quickly.
