QUICHE

1 9" pie shell (thawed or freshly made) (click here)
1/2 cup broccoli florets (cut into small pieces)
1/3 cup diced onion
1 Tbsp. butter
3 slices of bacon
4 eggs
1 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 - 2 cups cheese (cheddar or swiss)

Preheat oven to 425 degrees.  Cook the bacon until crisp.  Let cool and then crumble in to pieces.  Melt the butter over medium high heat and add the diced onion.  Cook for two to three minutes until the edges just barely start to brown.  Spread the broccoli evenly in the bottom of the pie shell.  Sprinkle evenly with the onions and bacon.  Spread about 1/2 - 3/4 cup cheese over mixture.  Whisk eggs then add salt, pepper and milk and whisk it all together.  Pour egg mixture evenly over vegetable/meat mixture in pie shell.  Top with the remaining cheese.  Cover edges of pie crust with foil.  Bake for 15 minutes at 425 degrees then lower oven temperature to 350 degrees and bake for 25 minutes.  Remove foil from edges of crust and bake another 20 minutes until top is browned and a knife inserted just off center comes out clean.

Feel free to substitute other vegetables and meats for the broccoli and bacon.  Peppers and diced ham are good.
