1 1/2 lbs ground beef
1 medium onion, chopped
2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
1 cup water
1 beef bouillion cube or 1 teaspoon beef base
1 (6 oz) can tomato paste
1 (28 oz) can tomatoes
1 (16 oz) can kidney beans, drained and rinsed
2 teaspoons chili powder
1 teaspoon salt
Cook ground beef and onion until brown. Drain off fat. Add remaining ingredients and mix well. Simmer on low heat on stove for at least 30 minutes. Can also simmer in the crockpot on low for at least 2 hours and up to 8 hours. Makes 6 - 8 servings.
I like to serve it with Fritos corn chips and sharp cheddar cheese. Other possibilities are sour cream, tortilla chips, or saltine crackers.
