This is another whole wheat bread recipe - slightly different from the Fool-Proof Whole Wheat Bread recipe previously posted. This recipe is adapted from the Deseret Recipes cookbook published by The Church of Jesus Christ of Latter-day Saints. Makes 2 large or 3 medium loaves.
1/2 cup hot water
1/2 cup brown sugar
1 Tablespoon yeast
1/2 cup hot water
1 T honey or granulated sugar
1 1/2 cups hot water
2 teaspoons salt
3 cups white flour
3 cups wheat flour (up to 1 cup more if needed)
1. Combine 1/2 cup hot water and brown sugar in large mixing bowl and let stand.
2. In small bowl, combine 1/2 cup hot water and 1 Tablespoon honey. Sprinkle yeast onto water and set aside.
3. To first mixture, add 1 1/2 cups hot water, salt, white flour and yeast mixture. Beat well.
4. Stir in, then knead on floured surface, 3 cups whole wheat flour, adding extra flour as necessary.
5. Cover. Let rise in a warm place until double in size. Punch down. Shape into 3 loaves and place into greased pans (2 loaves if using large pans). Cover and let rise until double.
6. Bake at 400º for 45 minutes.
