CHICKEN AND POTATOES

1/2 cup vegetable oil - divided in half
2 cloves garlic, divided, crushed through garlic press
1 teaspoon salt, divided
1 teaspoon pepper, divided
2 medium baking potatoes, peeled, quartered and sliced
2 large boneless skinless chicken breasts, cut into cubes
1 cup bread crumbs

Combine 1/4 cup vegetable oil, 1 clove of garlic (crushed), 1/2 tsp salt, and 1/2 tsp pepper in a shallow bowl.  Add potato slices and stir to coat.  Remove potato slices from oil mixture and place them in a microwave safe dish.  Cover with lid or wax paper.  Microwave on high for 5 minutes.

While potatoes cook, add remaining oil and garlic to whatever oil mixture was left in the shallow bowl.  In another bowl, combine bread crumbs with remaining salt and pepper.

After removing potatoes from microwave, add half of the chicken cubes to the oil mixture, remove and dip into bread crumb mixture.  Place chicken cubes on top of potatoes.  Repeat until all of the chicken has been coated and is on top of potatoes.  Sprinkle any remaining bread crumb mixture over the chicken and potatoes.

Cover with wax paper.  Cook on high for 8 - 10 minutes until potatoes are tender and chicken pieces are tender and white throughout.  Let stand, covered, for 5 minutes before serving.
