RAISIN SQUARES

Pastry:
4 1/2 cups flour
1 teaspoon salt
1 1/2 cups shortening
10 Tablespoons water
Filling:
1 package seedless raisins
2 large apples, chopped fine
1 cup boiling water
2 1/2 Tablespoon flour
1/2 cup sugar
1/2 teaspoon salt
1 Tablespoon lemon juice
1 teaspoon cinnamon
1 egg

Preheat oven to 375°. 
Combine pastry ingredients. Divide pastry into two balls. Roll one ball to fit in a 12”x18” pan. Set second ball aside.
For filling, in medium saucepan stir together  raisins, apples, water, flour, sugar, and salt. Bring to boil and boil seven minutes stirring occasionally. Let cool slightly then stir in lemon juice and cinnamon.  
Spread filling into prepared crust. Roll out top crust to cover and place on top of filling. Beat egg and spread on top crust.  Sprinkle with sugar. Bake 30 minutes or until crust is light brown.
