ROLL OUT SUGAR COOKIES

1 cup butter, softened
1 cup sugar
1 large egg
2 teaspoons baking powder
1 teaspoon vanilla
2 3/4 cups flour

Preheat oven to 400 degrees.

Cream butter and sugar with electric mixer.  Beat in egg and vanilla.  Combine flour and baking powder and add one cup at a time.  Mix well.  Dough will be very stiff. Do not chill dough. Divide dough into 2 balls.  On a floured surface, roll out one ball dough to desired thickness (about 1/4" is good). Dip cookie cutters into flour before pressing into dough.  Bake cookies on an ungreased cookie sheet for 6-7 minutes or until edges are very lightly browned.

Remove for cookie sheet to cooling rack and decorate as desired. Here is my favorite "dries hard" icing.

1 cup sifted confectioners sugar
2 teaspoons milk
2 teaspoons light corn syrup
Food coloring

Mix milk and sugar together.  Add corn syrup and mix well.  Tint if desired.  Spread on cookies and let harden.  To thin icing add corn syrup a little at a time.
