1 cup vegetable oil
2 cups sugar
1 can pumpkin (15 oz)
2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
4 oz cream cheese, softened
3 Tablespoons butter, softened
1 teaspoon vanilla
2 1/4 cups powdered sugar
Preheat oven to 350 degrees.
Combine first four ingredients in a large bowl. Using a wire whisk, mix together flour, baking powder, baking soda, salt and spices; add to pumpkin mixture and mix well. Spread onto a greased and floured jelly roll pan (half sheet tray size). Bake 20 - 25 minutes. Cool
Frosting:
Beat together the cream cheese, butter and vanilla. Gradually add powdered sugar. Mix well. Frost cooled cake and cut into bars.
