1 cup semi-sweet chocolate chips
½ cup plus 1 ½ Tablespoons shortening
¾ cup sugar
1 egg
¼ cup light corn syrup
1 teaspoon peppermint extract
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup crushed peppermint candy
additional sugar and crushed peppermint candy
Melt chocolate in double boiler or microwave. Cream shortening in a large mixing bowl; gradually add 3/4 cup sugar, beating until light and fluffy. Add chocolate, beating well. Add egg, corn syrup, and flavorings; beat well. Stir in flour, baking soda, salt, and the crushed candy. Shape dough into 1 inch balls and roll in additional sugar (I add a little of the crushed candy to the sugar). Place 2 inches apart on ungreased baking sheet. Bake at 350º for 10 - 15 minutes. Cool on cookie sheets 5 minutes, then remove to wire rack.
