CROCK POT PORK ROAST AND SWEET POTATOES

2 pound pork loin roast
1 1/2 to 2 pounds sweet potatoes
1 cup chicken broth
1 teaspoon onion powder
1 teaspoon minced garlic (not dry)

Peel and slice sweet potatoes into 1/4" thick slices.  Place in bottom of crockpot.  Place pork roast on top of potatoes.  Combine chicken broth, onion powder, and garlic and pour over pork and potatoes. Cover crockpot and set on high.  Cook on high for 2 1/12 to 3 hours then switch to low and cook another 2 1/2 hours or so until meat is tender.  Remove meat from crockpot and slice or pull using two forks.
