2 -3 pounds small red potatoes
1/4 cup olive oil
1 teaspoon pepper
1 1/2 teaspoons salt
2 Tablespoons minced garlic
Heat oven to 375º. Line a baking sheet with aluminum foil (for easy cleanup). Wash potatoes and cut into halves or quarters. In a large bowl or zipper bag, combine the olive oil, pepper, salt, and garlic. Add the potatoes and stir until all are coated. Put potatoes on baking sheet in a single layer. Bake for 20 minutes and turn potatoes. Bake another 20 minutes and stir again. If potatoes are not as soft inside or crispy outside as you would like, bake for another 15-20 minutes.
