After trying this using the Instant Pot and having it come out as a puree, I decided to cook it on the stovetop and this version is perfect! Almost like eating real mashed potatoes!
1 head of cauliflower trimmed from stalk and cut into pieces
1 cup of chicken broth (more or less - I didn't measure it)
Salt
Pepper
Put cauliflower into large pot. Add broth. Bring to boil over high heat. Reduce heat and simmer 10 minutes until cauliflower is fork tender. Using a slotted spoon remove cauliflower to colander to drain. Pour cooking liquid into a measuring cup. Put drained cauliflower back into pot and mash with a potato masher. Place 3/4's of the mashed cauliflower into a food processor and pulse for a minute or so until cauliflower looks semi-smooth. Add processed cauliflower back to pan with remaining mashed cauliflower and stir to combine. Add a little of the reserved broth if you think it needs to be a little more creamy. Season with salt and pepper - I used a few pinches of salt and a couple of turns of the pepper grinder.
