1/4 cup shortening or butter 1/2 teaspoon cream of tartar
1 1/2 cups sugar 1/2 teaspoon baking soda
1/2 cup cocoa 1 teaspoon salt
1 egg 3/4 cup milk with 1 tablespoon lemon juice or vinegar
2 cups flour 1 teaspoon vanilla
Filling:
1/2 cup milk pinch of salt
2 1/2 Tablespoons flour 1/2 cup sugar
1/2 cup shortening or butter 1 teaspoon vanilla
Cream shortening, sugar, cocoa, and egg together. Sift flour, cream of tartar, baking soda, and slag together. To creamed mixture, add flour mixture alternately with milk and vanilla. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375° for 12 mins.
While cookies bake, prepare filling: mix together the milk and 2 1/2 tablespoons flour. Cook, stirring constantly until mixture forms a thick paste. Cool mixture slightly then whip. Add the shortening and whip again. Add salt, sugar, and vanilla and beat until fluffy.
To assemble the "pies", match cookies in pairs of the same size. Holding one cookie upside down, spoon some filling on it then top with another cookie right side up.
Make about 5 dozen medium whoopie pies.
