2 small zucchini, sliced
2 Tbsps butter
1/2 to 1 tsp onion powder
Approx 1 cup grated cheddar cheese
Salt to taste
Sauté the zucchini in butter, seasoning with onion powder. Combine quinoa, zucchini, and cheddar cheese and stir gently to mix. Add salt if desired. Serve hot.
