CREAMY CHICKEN AND WILD RICE SOUP


1 6oz box long grain and wild rice mix, prepared (like uncle bens)
2 Tbsp olive oil
 1 large red onion chopped
1 c. celery chopped
2 c. carrots chopped
4 cloves garlic chopped
8 oz mushrooms slice (optional)
1/3 cup flour
1/4 thyme
32 oz chicken stock or broth
2 cups of water
2- 12 oz can evaporated milk
2 c. cooked chicken, diced
salt and pepper to taste

prepare rice according to the box and set aside. Heat oil and add onion, celery, carrots, garlic, and mushrooms. cook until onions are soft. Stir in thyme and flour. Add water, stock, and evaporated milk. Heat to a boil then simmer for 20 min or until it starts to thicken. add chicken and wild rice, heat for another 10 minutes.
