SWEET AND SOUR SAUCE

20 oz can pineapple chunks
1/4 cup brown sugar
2 Tbsps corn starch
1/4 cup vinegar
1 Tbsp soy sauce
1/2 tsp salt
1 medium green pepper, cut into strips
1/4 cup thinly sliced onion
Cooked meat of choice (chicken, pork, beef)

Drain pineapple chunks and reserve all of the liquid.  If necessary, add water to make one cup of liquid total.  In a medium saucepan, combine the brown sugar and corn starch until no large lumps of brown sugar or corn starch remain. Stir in reserved pineapple juice, vinegar, soy sauce, and salt.  Cook over high heat stirring constantly until thickened and bubbly.  Stir in pineapple, peppers, and onion.  Cook over low heat until vegetables are crisp but tender.  Stir in meat of choice (shredded or stir fried chicken or pork).  Serve over hot cooked rice.
