ALMOST KETO BANANA MUFFINS

2 cups almond flour

1/2 cup Lakanto Monkfruit sweetener or Swerve or 1/4 cup Pyure

1/3 cup whey protein powder (plain)

1/2 teaspoon salt

2 ripe bananas, mashed

2 eggs, beaten

2 Tablespoons vegetable oil

1/2 teaspoon vanilla

Preheat oven to 350°. Grease a 12 cup muffin pan. Whisk dry ingredients together. Combine wet ingredients and stir into dry ingredients. Spoon into muffin cups. Bake 20-25 minutes until slightly brown on edges. I turn my pan halfway through the cooking time to ensure even baking.
