1 Tbsp olive oil
3 cloves of garlic, minced
1/2 of a large onion diced
1 tsp ground coriander
1 1/2 tsp turmeric
1 tsp cumin
1 or 2 large sweet potatoes, peeled and diced (one will be more soupy, two will be more like stew)
1 tbsp tomato paste
1 can (48 oz) petite diced tomatoes
2 cans (15 oz each) black beans, drained and rinsed
1/2 to 1 pound of cooked chopped meat (pork, chicken, or beef)
2 cups broth (vegetable or chicken)
Salt
Pepper
1. Heat oil in large pot. Stir in onions and garlic and sprinkle with salt and pepper. Sauté for a couple of minutes.
2. Combine coriander, turmeric and cumin and sprinkle over onions and sauté a couple more minutes.
3. Stir in sweet potato cubes along with a pinch of salt and pepper and sauté another 2-3 minutes.
4. Stir in remaining ingredients and bring to boil over medium high heat. Once boiling, reduce heat to low and simmer for 20 - 30 minutes until potatoes are tender.
Serve over rice or quinoa.
