JU’S BRAZILIAN BEANS

 2 1/2 cups cooked pinto beans*
1 Tbsp olive oil
2 cloves garlic smashed into paste
1 - 2 thick slices onion chopped
1 slice bacon minced, if desired
Water if necessary
Salt and pepper to taste

 Sauté garlic and onion (and bacon) in olive oil. Add beans, salt and pepper and water if needed to make it creamy. Bring to a boil stirring regularly until creamy. 

*to cook beans - soak overnight then put in instant pot with water 2 fingers above beans. Cook 45 mins in instant pot and release pressure immediately.
