SNICKERDOODLES



1 1/2 cups sugar

1 cup unsalted butter, softened

2 eggs

1 tsp vanilla

2 3/4 cup flour

2 tsps cream of tartar

1 tsp baking soda

1/4 tsp salt

1/4 cup sugar

2 tsps cinnamon


Preheat oven to 400°.  Line cookie sheets with parchment paper or silicone mats.  

Combine 1 1/2 cups sugar, butter, eggs, and vanilla.  Stir in flour, cream of tartar, baking soda, and salt.  Mix until just combined. In separate bowl, combine 1/4 cup sugar and cinnamon.  Roll dough into balls (1” to 1 1/2”). Roll balls in cinnamon sugar mixture.  Place 2 inches apart on cookie sheet.  Bake 8 - 10 minutes until cookies are puffy and barely brown on edges. Remove cookie sheet from oven, tap lightly on counter to settle cookies.  Cool on pan for 1 to 2 minutes then remove to cooling rack and cool until completely cooled
