2 eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 Tbsps melted butter
1/4 tsp salt
Butter for pan
Filling ingredients (fruit, meat, cheese, peanut butter, Nutella, etc)
Combine first six ingredients in blender for 10-20 seconds. Let batter sit while prepping filling ingredients (slicing fruit or cheese, chopping meat, etc)
Heat a small non stick pan. Lightly coat with butter. Add 2 to 3 tablespoons of batter to heated pan and swirl around to spread batter thinly. Cook 30-40 seconds until edge starts to curl then flip and cook another 10-20 seconds. Remove to plate or cutting board, keeping crepe flat. Serve with desired fillings/toppings.
Makes 12-20 crepes
