Cake ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar
½ cup light brown sugar
1 teaspoon cinnamon
½ teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon salt
1/3 c vegetable oil
1 teaspoon vanilla
1 Tablespoon apple cider vinegar
1 cup apple cider
Apple cider glaze
1 cup powdered sugar
2-3 Tablespoons apple cider
Cinnamon sugar topping
3 Tablespoons granulated sugar
1 1/2 teaspoons cinnamon
Preheat oven to 350°. Grease an 8” square pan. Mix the dry cake ingredients together in a bowl. Combine the wet cake ingredients and stir into dry cake ingredients. Mix until smooth. Pour into prepared pan and bake 35-40 minutes until toothpick comes out clean.
While cake is baking prepare the glaze and topping. For the cinnamon sugar topping, combine granulated sugar and cinnamon until well mixed. Set aside. For the glaze, combine the powdered sugar with 2 tablespoons of apple cider. If needed, add a little more cider if glaze is too thick. Cover and set aside.
When cake is finished baking, cool for 10 minutes then spread glaze over top being sure to get all the way to the edges. Then sprinkle cinnamon sugar mixture evenly over top. Let cake finish cooling. Store any leftovers tightly covered in the fridge.
