JU’S BRAZILIAN POTATO SALAD

5 carrots (2 cups cubed) 
6 medium potatoes (5 cups 1/2” cubes)
1/2 onion diced very fine
1/2 cup+ a little mayonnaise
sprinkle of garlic powder
salt and pepper to taste 

Boil carrots and potatoes 5 minutes.  Drain well.  Gently combine with remaining ingredients. Cover and refrigerate until serving.
