1 pound boneless, skinless chicken breasts
1 egg, beaten
2 to 3 Tablespoons soy sauce
flavored bread crumbs (1/2 to 1 cup)
vegetable oil for frying (enough to make a depth of 1/2 inch in the pan)
1 (16 oz) can sliced peaches in syrup
Preheat oven to 350 degrees. Cut breasts in half. Combine egg and soy sauce in a bowl. Dip chicken pieces into egg mixture then into bread crumbs to coat. Fry in 1/2 inch of hot oil until golden brown on each side (only 1 minute or so per side). Lift out of frying pan, allowing excess oil to drip back into pan. Place pieces in baking pan. Cover baking dish with aluminum foil and bake for 30 minutes. Take off foil, add the peaches (including liquid), recover with foil and bake an additional 15 minutes. Serve with rice. Makes 4 servings.
