NEW ENGLAND BOILED DINNER

These are traditionally made with Corned Beef but I prefer Ham. Here's my recipe:
New England Boiled Ham Dinner 1 Smoked Ham, 5 or 6 lbs small to medium size potatoes, peeled baby carrots (1 1/2 to 2 lbs) onions, skins removed (2 or 3 medium) 1/2 tsp pepper 1 head cabbage, cut into quarters Put ham in a very large pot. Fill pot with enough water to cover ham by 1". Cover pot and bring to a boil. Boil about 1 1/2 hours. While meat boils, peel enough potatoes for 2 or 3 per person. Remove skins from onions but don't cut. After boiling meat for 1 1/2 hours, add the potatoes, carrots, onions, and pepper. Boil another 40 minutes then add the cabbage. Boil another 20 minutes. Remove meat to cutting board and cut into slices or chunks. Remove vegetables to serving bowl. Be sure to save broth to use for ham and bean soup or split pea soup!
