2 cans water chestnuts (drained and chopped)
2 - 3 cups slivered almonds
2 cups chopped celery
1 cup crushed pineapple (drained)
Dressing:
3 cup mayonnaise
1 Tbsp soy sauce
1 Tbsp lemon juice
Combine chicken, water chestnuts, almonds, celery, and pineapple in large bowl. In medium bowl, whisk together mayonnaise, soy sauce, and lemon juice. Pour mayonnaise mixture over chicken mixture and stir well to combine.
Serve over croissants. This recipe will make 12 - 16 large croissants
Smaller recipe (1/3) will make 4 - 5 large croissants
2 2/3 cups shredded cooked chicken
2/3 can water chestnuts (drained and chopped)

1 12 oz can chicken, rinsed and drained (mine equaled 1 cup of chicken)

1/4 cup chopped celery
2 T crushed pineapple, drained
1/4 cup plus 2 Tablespoons mayonnaise
1/2 teaspoon soy sauce
1/2 teaspoon lemon juice
