1 cup cornmeal
1 1/4 cups sugar (can be adjusted down to 3/4 cup)
4 tsps baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup melted butter, shortening, or vegetable oil
Preheat oven to 400 degrees. Grease an 8 x 8" pan or muffin pan.
Combine dry ingredients in a large bowl. In a small bowl combine egg, milk, and butter. Add liquid ingredients to dry ingredients and stir only until all is moistened. Pour into prepared pan and bake 25 to 30 minutes. Makes 9 - 12 servings (9 per square pan or 12 muffins).
The high amount of sugar in this recipe allows the corn bread to be extremely moist. Yum!
