2 sticks (1 cup) salted butter, softened
7 - 7 1/2 cups powdered sugar
1 Tablespoon milk or water
essential oils for flavorings - I used Young Living peppermint, lime, and lemon
food coloring, if desired
Make sure butter is very soft. Cream butter, then gradually add in powdered sugar one cup at a time. Add milk to bring mixture together. Knead in food coloring and 8 - 10 drops of essential oils - I only use Young Living oils that have been approved for dietary use. If you want different flavors of mints, divide dough into fourths before adding coloring and essential oils. I made a 1/2 batch flavored with 4 drops of peppermint oil, leaving one half of the peppermint batch uncolored and I added about 1 Tablespoon of baking cocoa to the other half to make chocolate mints. Then I made another 1/2 batch, divided it in half, coloring one half green and flavored with 2 - 3 drops of lime oil and the other half yellow flavored with 2 - 3 drops of lemon oil. Form into small balls about the size of marbles. Place on cookie sheet lined with parchment paper. Press down with a fork to flatten slightly. Store in an airtight container in the refrigerator. One full batch makes about 140 mints.
