SHEET PAN MEALS

CHICKEN, BROCCOLI, AND SWEET POTATOES

2 sweet potatoes, peeled and diced into 3/4” cubes
4 Tablespoons olive oil, divided
2 large chicken breasts cut into 1 to 1 1/2” cubes
1 head of broccoli but into florets, about 3 cups
1 medium onion, peeled and sliced
1 teaspoon minced garlic
Salt and pepper to taste

Preheat oven to 400°.
Spray a cookie sheet with cooking spray.
Place sweet potato cubes in a bowl and toss with 1 Tablespoon of the olive oil.  Spread in an even layer on the cookie sheet.  Bake 15 minutes.
While the sweet potatoes cook, combine the chicken, broccoli pieces, and onion slices in a large bowl.  Add garlic and remaining olive oil and toss til everything is coated.
When the 15 minutes are up, add the chicken mixture to the pan and spread evenly.  Season with salt and pepper.  Return pan to oven, bake 10 minutes then use a spatula to stir mixture around in pan,  bake another 5 to 10 minutes.  Potatoes and broccoli should be fork tender.

SALMON or COD SHEET PAN DINNER

1 piece of frozen salmon or cod (about 1/3 to 1/2 pound)
1 cup Frozen pearl onions
1 teaspoon dried thyme
1 Tablespoon dried parsley
1/2 teaspoon black pepper

Preheat oven to 375°.
Place fish and onions on sheet pan. Sprinkle with seasonings.
Bake 20 to 30 minutes until fish is flaky.
