MATT'S FAVORITE CHICKEN

4 boneless skinless chicken breasts                  milk - about 1/2 cup
1/2 cup seasoned bread crumbs                        oil for frying
1 teaspoon Pampered Chef dill mix

Preheat oven to 350°. Rinse chicken and trim away fat. Cut each breast in half. Combine bread crumbs and dill mix in a bowl.  Put about 1/2" to 3/4" milk into a separate bowl. Heat 1/2" oil in heavy pan over medium heat.  Dip chicken into milk then into bread crumb mixture - coating all over. Fry in hot oil for a couple of minutes until brown then turn over and brown other side. Place each piece into a 9"x13" pan. Cover tightly with  aluminum foil and bake 30 minutes (fresh chicken) or 45 minutes if starting with frozen (undefrosted) chicken.
