This recipe from the label of Kroger Quick Oats quickly became a family favorite many years ago.
1 1/4 cups quick oats 1/2 teaspoon baking soda
1 cup sifted flour 1/2 teaspoon salt
1/2 cup sugar 1/2 cup vegetable oil
1/2 cup brown sugar 1 egg
1 cup coconut 1 teaspoon vanilla
1/2 cup chocolate chips
Preheat oven to 325º. Combine dry ingredients in large mixing bowl. Stir in oil, egg, and vanilla. Mixture may seem almost dry. Form into 1" balls. Place on ungreased baking sheet about 2" apart. Bake for 12 - 15 minutes.
Makes about 3 1/2 dozen.
