2 cans Mexicorn (Green Giant), drained
8 oz pepper jack cheese, shredded
1/2 cup parmesan cheese, shredded
2 cups Hellman’s mayonnaise
Mix all ingredients together. Put into casserole dish and bake at 350° for 20 - 25 minutes.
Serve warm with tortilla chips or Fritos corn chips.
Personal note: 1/2 recipe fits perfectly in the 1 quart square Corningware dish.
