1/3 cup shortening
2/3 cup brown sugar2 tablespoons molasses
1 egg
1/2 cup sifted flour*1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup quick cooking rolled oats*
1 cup seedless raisins
Melt shortening; pour into a bowl. Stir in sugar and molasses. Add egg and beat well. Sift flour, soda and salt into the shortening mixture. Then blend in rolled oats and raisins which have been rinsed and drained.
Turn into a greased 8-inch square pan. Bake at 350@ F. for 25 to 30 minutes. Cool and cut into squares.
*I used Bob’s Red Mill Gluten free flour and gluten free oats and they worked fine.
