ALMOND DIAMONDS

2 1/2 cups flour
3/4 cup super fine sugar (blend 1 cup granulated sugar until fine)
1/8 teaspoon salt
2 sticks (1 cup) unsalted butter, very soft
2 Tablespoons softened cream cheese 
2 teaspoons vanilla 
1 1/2 cups semi sweet chocolate chips 
1 1/2 cups sliced almonds, toasted if desired. 

Directions: Preheat oven to 375°. Line a 12" x 18" baking sheet with parchment paper being sure paper oberhangs the edges. Combine flour, sugar, and salt in large mixing bowl. Add the softened butter and mix until crumbly. Add cream cheese and vanilla and mix until it holds together. Use hands to combine, then press dough into the paper lined baking sheet. Bake 18-20 minutes until cookies are very lightly browned. Remove from oven and evenly sprinkle the chocolate chips over hot cookie. Allow to sit for 3-5 mins and when chocolate has melted use the back of a spoon to spread chocolate evenly over cookie. Immediately sprinkle with almonds and set aside to cool, refrigerating if necessary. Once chocolate is set use a pizza cutter to cut crosswise in both directions forming diamonds or small squares. Remove from pan and place on cooling rack. Store cookies in air tight container. Refrigerate if necessary.
