one onion, sliced
2-3 slices bacon
salt & pepper
Rinse and pick over peas. Place in large pot and cover with one inch of water. Bring to boil, boil 5 minutes then turn off heat and let peas soak for 1 hour. Add onion, bacon, a few dashes of salt and pepper, more water if necessary and bring back to a boil. Check to be sure pot doesn't boil dry, adding more water if necessary. Cook for about 1 1/2 hours until peas are tender. Serve over warm rice. Add extra salt and pepper to taste.
Vegetarian version: Omit bacon.
Instant pot version:
Rinse and pick over peas to remove bad peas or stones. Place peas in instant pot. Add onion, bacon, salt, and pepper. Add 5-6 cups of water depending on how saucy you like your beans. Stir it all together. Place lid on pot, set to seal. Set to pressure cook on high for 18 minutes. Use natural pressure release.
