Using bread machine to mix, knead and quick rise, put ingredients in pan in the following order:
1 1/8 cups warm water
1 egg, beaten
1/3 cup vegetable oil
3 1/4 cups flour (add a little more if needed after mixing has started)
1 tsp salt
1/4 cup sugar
1/3 cup powdered milk
2 Tbsps yeast
Set bread machine on dough cycle. After it mixes and kneads (my machine takes 20 minutes to do this), let dough rise in machine for 10 minutes. Turn machine off. Remove dough from pan and press down. Roll out into a rectangle about 1/2" thick. Spread with the following topping:
1/2 cup butter mixed with 1 cup sugar and 2 Tbsps cinnamon.
Roll up and slice into 1" thick slices and place 1" apart on baking sheet lined with parchment paper. Preheat oven to 375 degrees. Let rolls rise for 5 to 10 minutes then bake for 5 minutes, turn pan around and bake for 5 to 7 more minutes. Remove pan from oven and let rolls cool for 10 minutes before icing.
Buttercream Icing:
2 cups confectioners sugar
3 Tbsps butter, softened
1/16 tsp (one pinch) salt
1 1/2 tsps vanilla
1 1/2 to 2 Tbsps milk
Combine ingredients until smooth and spread on warm rolls.
