12 vanilla wafers
1 (8oz) block cream cheese, softened
3/4 cup sugar
1 Tbsp lemon juice
2 eggs
1 tsp vanilla
Toppings: pie filling (cherry, blueberry, etc), strawberry preserves, sour cream, caramel sauce, etc.
Preheat oven to 350 degrees.
Line muffin pan with cupcake liners. Place one vanilla wafer in the bottom of each cupcake liner.
Place cream cheese, sugar, lemon juice, eggs and vanilla in blender and blend until smooth.
Divide cheese mixture evenly between the 12 muffin cups, filling each cup about halfway.
Bake about 25 minutes until slightly brown. When cool, top with desired toppings and serve.
