1 pkg chicken flavor ramen
4 cups (plus a little) cole slaw mix
3/4 to 1 cup sliced almonds
1 cup cooked shredded chicken
1 cup frozen peas, thawed (not cooked)
1/2 cup thinly sliced green onions
1/4 cup vegetable oil
2 Tablespoons vinegar
2 Tablespoons sugar
seasoning packet from ramen pkg
Break ramen noodles into small pieces into large bowl. Add cole slaw mix, almonds, chicken, peas and green onions. Stir to combine. In a jar, shake oil, vinegar, sugar and seasoning packet from ramen noodles together until well combined. Pour dressing over chicken mixture and stir until coated. When I made this for dinner tonight, I didn't have any green onions so I added 1/2 teaspoon of onion powder to the dressing mixture.
Makes 4 or 5 servings.
