PRESSURE COOKER SPLIT PEA SOUP

1 Tbsp olive oil or butter
1/2 - 1 onion, chopped
1 cup chopped celery
1 large carrot, finely diced
3 1/2 cups broth (ham, vegetable, or chicken)
1 cup dry split peas, sorted and rinsed
salt and pepper to taste
1 cup diced ham (I've used deli ham cut into thin strips)

Heat oil (or butter) in pressure cooker. Saute onion, celery and carrots for 5 minutes, stirring frequently. Add broth, split peas, salt, pepper, and ham to pressure cooker. Cover and bring up pressure. Cook for 12 minutes. Let pressure reduce on its own or run cooker under cold water.

INSTANT POT VERSION:
Sauté onion, celery, and carrots in butter or olive oil using sauté setting on IP.  Turn IP off and add split peas, broth, salt, pepper, and ham.  Set vent to ‘sealing’. Set IP to Pressure Cook and set time for 12 mins. Use natural pressure release.

Vegetarian version: use olive oil for sauteing, use vegetable broth and leave out the ham.
