Daniel recently made this as one of his missionary prep meals. It is a tasty, quick, and easy meal.
1 lb ground beef
1 can condensed tomato soup
1/2 cup salsa
1/2 cup water
6 (6" each) flour tortillas, cut into 1" pieces
1/2 cup shredded cheddar cheese
Cook ground beef in skillet over medium-high heat until well browned, stirring often to break up. Drain off fat. To the cooked meat in the skillet, add the soup, salsa and water. Stir to combine. Gently stir in the tortilla pieces. Heat to a boil over medium heat. Reduce heat to low and simmer 5 minutes. Stir. Top with cheese and serve. Makes 4 servings.
Next time I make this I plan to add 1/2 cup of black beans and use corn tortillas instead of the flour tortillas. I'll report back to let you know how it turns out.
