PASTA SALAD

2 cups elbow macaroni, spiral or shell shaped pasta
1 1/2 cups frozen peas - thawed
3 slices deli ham
1 cucumber
1/4 cup italian dressing
2 Tablespoons mayonnaise

1.  Boil macaroni 6 - 7 minutes.  Drain and rinse with cold water.  Drain well.  Refrigerate 20 - 30 mins.
2.  While macaroni cooks and cools, place frozen peas in colander.  Rinse with warm water.  Let sit at room temperature to thaw.
3.  Cut ham into small pieces - 1/2" square pieces.
4.  Peel cucumber and cut into bite size pieces.
5.  Combine italian dressing and mayonnaise.
6.  Add veggies and ham to macaroni - stir to combine.
7.  Stir in dressing mixture.
8.  Refrigerate until ready to serve.

Feel free to add or substitute other veggies or meat.
