1 1/4 cups flour
1Tablespoon baking powder
1/2 teaspoon baking soda
1Tablespoon sugar
1 teaspoon salt
1 egg, beaten
1 cup buttermilk (or 1 cup milk with 1T lemon juice or vinegar - stir together and set aside for a couple of minutes before mixing with egg and oil)
2 Tablespoons oil or shortening
Combine dry ingredients in mixing bowl. Combine wet ingredients in a separate bowl or measuring cup. Add wet mixture to dry mixture and stir just enough to moisten. Bake on an oiled hot griddle. Makes 8-4" pancakes.
